Healthy, fast and cheap dinner ideas

AA0A4A4D-C641-47E2-B08B-5273CE79BE19.pngSince my article from two weeks ago was such a succes, I decided to write another one with the same concept but instead of breakfast, dinner ideas. I feel like the ”what should we eat for dinner tonight?” is one of the most popular questions in any household. In my home country, the Netherlands, they raised the tax on food this year and I can tell you that the total cost for groceries is much higher than I was used to. Are groceries in your country getting more expensive as well, but do you still want to continue with getting that body ready for summer 2019 and not spending too much money on food? Then stop with what you were doing and take a look at the dinner recipes in this article.

Pasta Pesto with mushrooms

What do you need?

  • 1/2 chopped union
  • 2 1/2 tablespoons of fresh pesto
  • 1 (16 ounce) package pasta
  • 1 cup of mushrooms
  • Some basil leaves
  • 2 tablespoons grated Parmesan cheese
  • You can add some more vegetables, for example some tomatoes if you would like to
  • Some salt and peper

Pour water into a large pot. While you’re waiting for the water to boil, cut the unions and other vegetables into smaller pieces. Once the water is ready, you put the pasta into the large pot. In the mean time, put the oil in a frying pan and add the unions, mushrooms and other vegetables. Cook them for about 5 minutes. Once the pasta is ready, you add everything together and don’t forget the most important thing: the pesto. Stir until all the veggies are divided equally and last but not least, add the Parmesan cheese and basil leaves. Enjoy your delicious Italian dish!

Mexican rice mix

What do you need? 

  • 1  cup of rice
  • 1 peper
  • 1 red union
  • 2 tomatoes
  • 1 cup of corn
  • 1 cup of kidney beans
  • Mexican seasoning mix
  • Some salt and peper
  • You can add some chicken, koriander or guacamole

Put the rice in a large pot with boiling water. While you wait for the rice to be ready, you cut the vegetables into small pieces. Put some oil in a frying pan and cook the vegetables for about five minutes. After the five minutes you add the kidney beans, corn and Mexican seasoning mix and stir this in the pan. Wait again for about two minutes and then add everything together into one big pan. Stir it once more so the mix is divided equally. Your meal is now ready to be served!

Baked potatoes with vegetables and a veggie burger

What do you need? 

  • 3 big potatoes
  • 1 broccoli
  • 1 cauliflower
  • 2 veggie burgers
  • Some salt, peper or other herbs
  • You can also add some carrots or unions

 

Cut the potatoes into thin slices. Grab a frying pan and put some oil in the pan. Add the thin potato slices and wait until they all have a nice gold colour. While you wait for the potatoes to be done, you cut the broccoli and cauliflower into small pieces and put them in a pot with hot boiling water. You make the veggie burgers ready according to the instruction on the package. Once your vegetables are ready, you put them together with the potatoes in the frying pan. Add some herbs, salt and peper and wait for about 3 minutes. Enjoy your meal! (Sorry there is no actual picture of the meal)
